Is butcher shop ham and cheese exceptable, not the

It may be.... you'll need to ask how it's cured. Most hams have added sugars (that's why it tastes so good!) and added nitrates. We're supposed to avoid foods with nitrates (and added sugar). At least try to find out what the ham was brined in... and how it was cured. Maybe you'll get lucky and it was a natural cure (no nitrates). You'll have to count the carbs, though...

A little cheese is okay. The harder/older the cheese, the fewer carbs it has. That's why aged cheddar has about 1/2 carb per oz and cottage cheese can have up to 5 gram per 1/2 cup. So go for the aged cheeses, not the soft cheeses. AND, watch your total intake. If you're having cheese with your morning eggs... and on your mid-day salad... and as a snack... it could make the difference between losing and not losing. Too much cheese is often the cause of a "stall". Use it as a garnish/condiment, not as the protein in a meal or snack. Snacking on cheese is bad, bad habit.
