I am way to lazy (or busy) lately it seems, so when I want pizza I just go order from our favorite local pizza place and eat the toppings only. Yumm!

Sounds like you have a great alternative that you enjoy. It's the little things like this that personalize the diet for you and help you make it a way of life.

There are lots of cooks who LOVE to experiment. Not all recipes are great, most are just OK. But many are quite wonderful. Also, you must keep in mind that many of the forum participants are NOT Atkins, so some of the recipes can't be used, especially during Induction.

OK - I found a recipe on another website. I made it last night - I almost cried! No, you won't get the breadiness of oven baked pizza, but this created a thin, tasty and wonderful crust that was able to hold up my toppings. And at 2 carbs per slice of crust - not bad!

Low Carb Pizza

4 ounces cream cheese
3 eggs
½ cup cream
¼ cup grated Parmesan cheese
½ teaspoon oregano
¼ teaspoon garlic powder
2-3 cups shredded Italian cheese blend
½ cup pizza sauce
mozzarella cheese

Beat together cream cheese and eggs until smooth.
Add cream, parmesan cheese, and spices. Blend well.
Sprinkle 2 cups italian cheeses into dish.
Pour egg mixture over it.
Bake at 350 for about 25 minutes.
Let stand for 5 minutes.

Spread on pizza sauce.
Sprinkle 1 cup of shredded mozzarella cheese.
Pile crust with your favorite toppings.
Sprinkle with shredded parmesan cheese.
Return to oven and bake until bubbly and golden brown.
Allow to stand 10 minutes before cutting.


Notes: If you want it to be more of a crust than a quiche, I'd recommend using a small cookie sheet/jelly roll pan (about 10 1/2" x 15 1/2"), and baking it a few minutes longer than the recipe says (or until it turns a golden brown).

Carb count of 16g for the whole crust... be sure to count up your toppings - they can add up! Good as cold leftovers, too.

Default Ahhh!!! Pizza.
After 2 months I finally had half of a 12" pizza.
Pizza was my life before Atkins and I didn't eat it for 2 months before buying Carbsense Pizza Crust Mix Garlic & Herb with only 3 carbs per slice (crust only).
It is not that hard to make and it only takes like 10 minutes to get it ready.
I recommend this to anybody that misses pizza like I did. You'll be delighted with the taste.

By the way this is not an infomercial...LOL

I go to Little Casear's and get a hot n' ready pepperoni pizza and munch out on just the toppings....I toss the crust out to the birds!
