Ben Weinman, but more for his song-writing. Rob Arnold is an incredible guitarist. Very gifted, indeed.

Jon Petrucci from Dream Theatre.
HELLS YES! I'm watching the Chaos in Motion World Tour DVD. Jordan Rudess is by FAR my fav in the band, but Eddy VH is right next to John Petrucci in my list for guitar players.

Having been brought up with a brother who is heavily into Guitars/Guitarists, I was forced to listen to everything.

For his time there's no better guitarist than Jimi Hendrix. He defined the standards for modern guitar playing and set the scene for improvisation, bringing the guitar out of the Rock and Roll era and into the era of Rock.

Eric Clapton/Cream followed soon after that and Eric's guitar playing was awesome, but he didn't experiment much and his style remained within defined parameters.
After a while, this became a bit boring.

During the mid-late 80's and early 90's, I was listening to such artists as Joe Satriani, Steve Vai and Yngwie Malmsteen. They were very clever men and I remember being in total awe with them at the time. Then, when the mid 90's rolled around, everybody who owned a guitar and had some experience with it could 'noodle' as well as they.
Long hours of noodling sessions ensued.

Then I listened to Dream Theatre and Jon Petrucci could switch from noodling to melodic playing to hightened riffs, then back to noodling again.
I also really like Herman Li from DragonForce for sheer speed. When I first heard DragonForce, I couldn't believe that a guitarist could play so damned fast!
A very talented man.
