Default It's duck season
I'm cooking one tonight. It says it's Canadian on the package.

I have an outdoor kitchen and am going to roast it on a grill. I think they are pretty greasy. I had it several times but never cooked one myself. It should be interesting.

What are you planning on using for basting it with?

i prefer a honey based myself, but I've tried it with either some orange mixed in, or I've used a hoisin mix as well, but I prefer the honey.

Must say though, I prefer geese to duck.

They are great on the rotisserie..... All the grease drips away.......

Were you kidding about the package??

Wild is much better than farmed......

I have had it often in restaurants (Peking duck) & it is quite fatty..... The crispy fat/skin is tasty (not healthy perhaps..lol) but under that is usually a layer of fat, covering the meat...

Wild duck has no thick layer of fat & is awesome as above w/ a good dry rub & 2/3 the time of a reg chicken.......

I love Hoisin...if it has hoisin in it or on it count me in...!~

I have that in my kitchen. I never use it. It's in a jar in the fridge. Someday the maid will throw it out.

I just used butter. I simmered it in water for 45 min them roasted it about another hour. It was good!

No, I just don't have access to wild type. I bought it for no particular reason. Like Sting, I'm tired of my food. I wanted to branch out.

You really should invest in a turkey frier if you have a penchant for duck. As well as, it would make a great addition to any outdoor kitchen.

I just added a combination wood/propane smoker to mine, a battle royal on eBay...to the victor goes the spoils. I haven't mustered up the time nor courage to try it yet though, I think I'm gonna have to figure out the "rub" process prior to doing so.
