All the times I have heard the term "land shark" were always in reference to dogs who eat anything and everything and applied to all breeds. I think it relates to those documentaries where the stomach contents of dead sharks are analyzed and things like license plates and other indigestible items are often found.

Maybe the different definitions/usages are regional? It's always meant to be funny too whenever I have heard the term used.
