I'd think that there'd be no shortage of knives in an apocalypse setting.. re: the book Earth Abides mentioned earlier in the thread.. the infrastructure was still there but the power stations had no one to run them. For a few generations there was no shortage of guns and bullets either.. However eventually they had to resort to hammering out arrow and spear heads from available metals.
