One of the best books I have read on the topic:

Saviours of the Islamic Spirit Volume III - Entirely dedicated to Mujaddid Alf-thani Ahmed Sirhindi

And yes, Akbar essentially tried to create his own hotch potch perennialistic religion. That's why he fell into zanaadaqa, bid'ah and fahshaa'

The entire series is simply brilliant and I would recommend every Muslim to read it:
