Default Chia seed question
hi, i was just reading about Steakmans dessert and had to do some research on Chia seed as i have not heard of these before. They sound like they could be a useful addition to my l/c pantry. I have phoned my local health shop and they have them in stock but before i run up there and clear his shop out i thought i would see if they have been used by anyone and to get the lowdown on taste texture etc. Are they really almost zero carbs? there is a list of recipes on one site and they sound delicious and most would be ok on Atkins (maybe not induction).

i couldnt wait so went to the shop before it closed and bought a small bag of Chia seeds. i have been a busy bee in the kitchen since. I made a tiny amount of Steakmans pudding (only a small ramekin of it) and i only had single cream but it worked fine, and i have to say it was very nice indeed, just like tapioca! i also tried a garlic and cheese pan bread which was ok but too omelette-ie for me to justify using them-i would just have an omelette. Then i made a pizza base and it worked great, its gone nice and crispy too. I have to say so far i would say it works better as a dessert but i have only done 3 recipes and there are loads of l/c Chia recipes online. What i like about it is that it has no taste itself so in that respect it comes up trumps for me as i am not keen on the hay like taste of flax and almond meal can be very sweet. the pack says 12gms of carbs and 11 fibre. so i think that means 1gm of carb (correct me if i am wrong)

Hi Tracy!! One of the products I work with is Chia seed. I'm glad you've tried it in some recipes. I add it to my yogurt each day and put it in other foods without hesitation. We often get calls from customers who swear it has helped them, especially with inflammation and lowering cholesterol. I can't answer your questions about Atkins program but can answer most of your Chia questions. Let me know. It looks like you've answered your first questions yourself. take care, Joanne

Sounds very interesting, Tracy. And thanks for stepping in if wee need help Chia Mom. I am on my way to my daughters and she will be interested in chia seeds as well. We probably will do some experimenting!

I find that I get better results by eating milled chia. Your body can absorb the nutrients faster and doesn't need to break through the seed's hard covering. Enjoy your visit, Aradasky!

I watched a short online video today by Dr. Mark Hyman... and he said to include chia seeds in your diet to reduce inflammation. Funny how things like this pop up over and over once you hear about!

He also suggested drinking green tea... and some other things that I can't remember now. LOL

Yes, we hear from customers often--but we cannot make any general claims about it--that their symptoms from lupus, fibromyalgia, arthritis, etc. have been relieved after using chia on a daily basis. This is very gratifying for us!!!
