Elizabeth (welcome, btw!), what diet are you following? The answer to your question depends on which program you're following. If you're not following ANY (just low carbing in general) then you can have whatever you decide you want to include in your daily food intake... you'll just need to figure out the carbs in everything and stick to your personal daily carb limit.
According to the USDA, coconut, fresh 1 piece (2"X2"X1/2") 6.85 g carb 4.0 g fiber... So each serving has 2.85 net grams carbohydrate. Not really a low carb item if you can't control the quantity. The USDA didn't have fresh coconut water. I did find this, tho, on another site I use: 1 cup coconut water, fresh from coconut 9g carb 3g fiber So it's 6 net grams per cup. FYI, I can't find coconut on ANY of the acceptable food lists for the Atkins Diet. It's not even on the Maintenance foods list. Arlene can tell us if it's in the latest book (man, I need to find my copy!)! |

Do you have the Induction foods list? If you're just starting out that list will answer ALL of your "can I have" questions... and it has all of the carb counts (except for some of the optional things like salad dressings and cream). Atkins.com has the list in PDF form... you can download it, print it and keep it your purse or your car or at work. NEVER be without that info when you start! Take it to the grocery store, too... it's your shopping list.

In the New Atkins For A New You, coconut oil is mentioned on pages 53 and 54. It comes under the heading of Saturated Fatty acids along with butter, lard, suet, and palm oil, which are all relatively high in saturated fats. You probably already know that the recent research indicates the benefits of saturated fats as part of a balanced diet of natural fats. Inclduing SFAs in your meals can actually lessens the plaque in your arteries. When your carb intake is restricted, your body makes less saturated fat and simultaneously burns more of it. During the weight loss phases of ATKINS, if you eat saturated fast, the less carbohydrate you eat, the more you reduce the saturated fat levels in your blood. Even in the weight maintenance phases of ATKINS, the increased intake of saturated fat is associated with decreased blood levels of SFAs. In the PHASE 1 (induction) ATKINS RECIPE BOOK, coconut milk is acceptable. There is a recipe suitable in Phases 1 through 4: THAI COCONUT- SHRIMP SOUP which has: 6 gms. net carbs, 20 g. Protein, 17 G. Fat, Calories 260 THAT IS FOR A ONE CUP SERVING. If you are wanting coconut I would be happy to post the recipe. |
