Default What's for lunch??
hi all, got this idea for a thread on the atkins site (atkins.com)

rightnow i'm having:

burger, with cheddar cheese,
cauliflower (4 nc's worth)
onion (2 nc's worth) - the veggies were fried in butter and blobbed on top of the burger (cauli was steamed first)

then i'm having 2.5 nc's worth of raspberries and 1.5 nc of whipped cream


life is good

I had a double quarter pounder with cheese from McDonalds, with no bun and no ketchup (so it had onions, pickles, mustard, and a piece of lettuce).

For dinner I made "Mom's Crazy Cabbage"...it is ground beef and onions layered between cabbage and topped with diced tomatoes. YUM YUM!!!!!

Lunch was leftover ham steak and Kugel (cauliflower/cheese casserole) and Kroger Carbmaster "Dairy Cultured Product". I hate yogurt...I LOVE this!

It's dinner, so I made a really huge veggie salad with iceberg, cauliflower, bell pepper, tomato, scallions, carrot, celery, and I am sure something else I have forgotten! Sauteed a 2 ounce chicken tender in Montreal spice, and topped the salad. Toasted one little slice of LC bread I made, with Deli Deluxe cheese and a slice of shaved ham and ate well!

Glass of Merlot topped it off! Ain't life grand???? Still 132 but who cares? There is always tomorrow....what is important is learning to deal with food.

I had 10 re-heated hot wings from a local sports bar.

They are not breaded and the hot sauce is 2 parts franks red hot 1 part butter. (0 carbs) So all in all they are zero carbs. I put them on a sheet pan in the oven for 10 minutes at 350 then finished them for 1 minute in the microwave. It got the perfectly crispy and nice and hot. Of course they are best straight from the bar but i buy them in groups of 40 that last me over a weeks time.

i also had a salad of baby butter lettuce with the balsamic spray dressing.

A very great lunch if i do say so myself.

yeah i really miss wings! they sort of do them here in australia (i['m canadian), but they are expensive, not good...and they usually have a feather sticking out somewhere, often more than one.

come on now.

I discovered WingZone wings and they are really good and 0 carb for many of their varieties. They deliver, too!

Today's lunch was salad with deli ham, small slice LC homemade bread and a Kroger Carbmaster strawberry/pomegranate "yogurt." Dinner was 2 LC tacos (a complete meal in the "shell".)

sadly, "low-carb" hasn't yet hit aussie land....still only low-fat....SIGH!

BUT! i made zucchini-chip thingys today, and added some homemade cajun spice, italian herbs,a nd a bit of tomato paste to the recipe. then i used them as a bun for a burger, with lettuce, mayo, avocado dip (thankfully found one with only cream cheese, avo, lime juice...no added nasties ) and olives. oh yes. oh yes.

I've tried some zucchini "faux" hash browns, zucchini fake pizza crust (maybe a little like your "buns") and had mixed feelings...not my favorite.

Is there a recipe for the "Zucchini Thingies??" LOL

My day was too boring to even post. Totally uninspired and don't want anyone telling me how few veggies I had or how too few carbs I ate..."I know, I know!" I just am totally BLAH! Still low carb, no cheating, but blah.

Have mixed emotions about zucchini...wring the heck out of them, and still the shreds are moist...will give it a fair try, however, and get back to you! It DOES sound really good!

the oven ones definitely stay together (maybe cause you use 2 eggs and 2 cups cheese??)

i make them into smaller rounds too (sandwich size )

hmmm, dunno about pumpkin...worth a try and please let me know!!!!

i may try that myself...but you could have it with cream cheese, van essence, cinnamon and sweetener...oh and some sour cream.....mmmmm

I'm trying a LC pumpkin pie tomorrow...using a "crustless recipe" so I am kind of unsure about the "pre-baked" pie shell for the custard. My pie shell recipe (flax, almond meal) is for a cold coconut creme pie, not something that has to be "baked."

I think I'll bake it ALMOST thru, cool, and then add the filling and bake again. However I won't press the crust to come up and over the rim like with a regular crust (to avoid charring.) I will use a glass 9" pie plate. Probably simpler to follow the recipe for the crustless, but I am adventurous!

If it a total disaster, I only have my son over so we can just eat the custard part and no one cares. We're easy. No critics here. Still, any suggestions?

NEW PIC!! Way to go, Tracy!

I wimped out. I made the crust but froze it for a coconut creme pie as it just seemed better for that and made the crustless pumpkin pie. It was good, but needed more pie spice. Still, good!

I had a nice Thanksgiving. Hope everyone had a good day!
