Try making the soup with vegetable broth, then! I think it would be bland w/o some kind of stock for flavor. I make cream of "whatever I have around" soup... asparagus, broccoli, cauliflower, onion, etc. It's a great way to use up leftover veggies... or overcooked veggies.
