I started on Atkins on May 16th and after just 3 months, my cholesterol dropped into the 180's after just 3 mos but more importantly, my triglercide # went from 250 to 84. My doctor was thrilled and told me to stay on Atkins. As I left the office, she jokingly said, "Enjoy your butter." I'm thrilled that my weight keeps going down and am so grateful to the late Dr. Atkins for his courage in organizing this program.

Default Cholesterol ?
This is my 2nd time around (1st time 60lbs lost) but never checked my Cholesterol. What have you seen in your levels since starting or maintaining a low carb lifestyle?

My 2nd time around results...
Started 3 weeks ago and have lost 17lbs.
New favorite snack: less than 1 carb per serving chicken nuggets.

Also post any words of inspiration. I no longer crave sweets except for jello. Its sugar free, but it satisfies.

In a food processor....

2 lbs. chicken skinless boneless breasts
1 tbsp. marjoram
10 oz. heavy cream (add cream slowly)
2 eggs
2 cloves fresh garlic - crushed (optional)

Mix and then take 1/2-1 Soy Flour and 1/2-1 cup Finely ground pork rinds for the batter. Roll chicken mixture into balls or take a spoon and make a nugget shape and rollin batter. Drop into deep fryer.

in this recipe

soy flour less than 10carbs, but you will use just a small amount. The pork rinds I used had 0 carbs. Chicken speaks for itself. The herbs - 0. Heavy cream - 0!

I figured that i have 10 per meal or snack at about 1-2 carbs total. Could be less than that. This all depends on how much breading you use. Lightly coat.
