Aargh ! There are 2 diners in my area - actually several miles away- where I can order corned beef hash with fried eggs -over easy-on top (no toast or extra potatos, if you please !)

I've been resisting the lure for 2 weeks now (for medical reasons), and all I can say is "AAAAARGH !!!"

I love making homemade corned beef...very delicious! Kudos! What are braised eggs?
Kinda like over easy and poached put together, sort of a hybrid best of both worlds eggs...I have a weakness for yoke and toast. You start out as if you're gonna cook some over easy eggs except after about a minute you throw in about a quarter cup of cold water plus a tea spoon of vinegar and cook for an additional two and a half to three minutes.

I'll precook some thin strips of honey maple ham, some scallion, and chopped baby portabella mushrooms seasoned with paprika, sea salt, peppercorn, a pinch of chili powder, and couple of pulls of Chulula hot sauce before I'll cook the eggs, at the two and a half minute mark of making the eggs, I'll cover 'em up with all this then top it off with shredded asiago.

Put all that on a bed of homemade corned beef hash with some lightly buttered potato bread toast and you're set for the rest of the day, maybe even the next.
